France-grown wild gentian roots
Suze is made with sustainably grown wild gentian roots
Gentian has large flowers with golden petals, but Suze gets its bittersweet taste from the plant’s roots. Gentian grows in the French mountains, for at least 20 years.Gentian roots are rooted out by the gentian farmer, using a devil’s pitchfork. Each root can weigh up to 6kg!
The "Gentian – Sustainable development" is an initiative that involves all links in the industry to improve resource management, social equity and the value of the gentian product.
Maceration: After being dug out, the gentian roots are washed, cut and left to macerate with alcohol for 12 to 18 months. Then the roots are pressed to extract a first juice. This extract is then macerated under hot conditions, clarified and then filtered.
Distillation: Part of this maceration is distilled in a copper still pot in a unique process that reveals the signature aromatic note of Suze, its characteristic smell of gentian.
Blending: The gentian maceration and gentian distillate are blended, then assembled with a secret aromatic bouquet of gourmet citrus and floral notes. A little sugar, neutral alcohol and softened water are added to the mix, to get to the very same flavor Suze has had since 1889.
